he hurried along with the empty "boîtes."


So where was he going in the opposite direction 
of his restaurant with the empties?

Betty, I wondered if there was a specific name in French for the lightweight produce boxes...

Danar, I agree that the waiters and chefs and servers of Paris, put forth great effort to please the customers (of all nationalities). Plus, they seem to have such pride in their profession.
