There are so many amazing pastries in Paris, 
but this boulangerie/pâtisserie is a favorite.


For many years my daughter and I stayed just around the corner 
and could smell the baguette ovens
from our beds in the early morning hours.  
Eric Kayser's orignal store is here on rue Monge, 
and if you are nearby you should definitely 
have a "baguette Monge."


The lemon tarts are pretty tasty, too

Moulins Burgeois - un camion de livraison



"A miller, and much more"


Coming out of Eric Kayser one morning we found these friendly delivery men bringing in the heavy sacks of flour from Moulins Bourgeois.  We asked permission for their photos and I was fascinated by the source of the flour which is transformed into the indescribable pastries and breads of Eric Kayser and other pâtisseries/boulangeries.


The company was established in 1895 in Verdelot and today continues to produce "classic bread-making flour, traditional French flour, gruel and flour from the USA, stone ground and organic flour."  With a staff of 80 people they serve a customer base of artisan bakeries, both within 200 km of the mill and Internationally to Europe and Asia.  


At home, would I notice a flour delivery to a bakery I frequented?
Probably not, unless it was Eric Kayser, John-Paul Hévin, Julien, Pierre Hermé, Dalloyau, Ladurée, La Petite Rose, Pâtisserie des Rêves, Stohrer, Coqueliqot.... just too many to name

Theme Day - Nourriture à emporter!



Carry-out!

In Paris my favorite "carry-out" is not a single café or bistrot, but the whole row of shops at Place Maubert.  One can start at the wine shop with the friendly King Charles Spaniel; move next door to the fromagerie, to the market on the corner for some fruit, the Charcuterie for saucisson sec, and finally Eric Kayser for une baguette Monge and a pastry for dessert.


You always stop last at Eric Kayser so you can stand in the fast-moving line for baguettes, still warm from the oven.  While you are there grab a little something to have with your café in the morning.  
Eat one of the warm baguettes as you stand on the street outside.


Now I am hungry!

Although it is not as healthy as a bowl of raspberries (perhaps), the delicious bed of custard and perfectly prepared pâte sablée makes it "almost healthy" and too divine to resist.

Baguette Monge et saucisson sec

Certainly there are many fine boulangeries in Paris but for me, the perfect baguette can be found at Eric Kayser (on Rue Monge).  You must ask for the Baguette Monge, and if you have good timing, it will be still warm from the oven.  
They are a little over 1€ - what a bargain.


For a little piece of heaven, step outside, pinch off the top, 
and take a bite while the steam fogs your face.

Papa, sa fille, et l'éclair au chocolat

The two of them opened the bag from the pâtisserie.  He helped remove her red mittens, seen here peeking out of her coat pocket.  She patiently waited while he "prepared" the éclair for eating.  He patiently waited as she ate the éclair, and then shared with him.  They devoured it all, and he even had some wipes to remove the chocolate from hands and face.


This was late afternoon, and he had probably picked her up from school.  I wonder if they will tell Maman why this little French girl does not have much appetite for dinner.

Eric Kayser II



The French know how to do it right! This pâtisserie is found in the 5ième Arr. on Rue Monge near Métro Maubert-Mutualité. When I stay in a hotel just around the corner, this is a twice-a-day stop for un café or to pick up something sweet (much smaller than these beauties).
Those macarons are very red!

I'm off on an adventure with Nanette to find some castanets -- I will still be posting daily but with fewer comments until I return.

miam-miam!


In December my daughter Holly and I went on a pastry hunt across Paris. It was our goal to find at least 5 patisseries which we had never visited. Bien sûr, part of the challenge included a sampling of the wares, all in the interest of scientific research!


This photo comes from Eric Kayser which is our daily stop on rue Monge so it did not count in our devious self-imposed contest. On the left is a périgourdin (chocolate, walnuts, caramel) and next to it an arabesque (apricots). I am not sure about the one on the right. You can barely see one in the upper left-hand corner which is a Mont-Blanc (so divine).


There will be more about the pastry hunt and I haven't even gotten to the macaron story (obsession) yet!
