Bûche de Noël
"yule log"
Adopting another French tradition,
we welcome Christmas with a bûche de Noël.
Using a recipe inspired by the celebrated Paris pastry shop Ladurée, the bûche consists of a buttercream icing, a roulade of fine bittersweet chocolate, and a filling of rich semisweet chocolate. The humidity and rainstorms steered us to marzipan rather than our preferred meringue mushrooms. Here is a recipe in English and another here in French. We used the English recipe.

We had much fun making the bûche and have been slicing pieces from each end. It is now about half the original length, but it does still look like a chocolate log.
ReplyDeleteI was given my grandmother's tiered pans for Jesus' birthday cake so it was much easier to assemble this year. It is not as large (think big tiered wedding cake) but has the four layers just as Grandmother made when we were children.
Harriet, you should try the English recipe. We had no difficulty in getting it to "roll."
